Almond Crusted Chicken

I was watching the Dr. Oz Show one day when he was talking about eating healthy.  A chef came on his show and cooked up this Almond Crusted Chicken dish that is not just healthy, but super easy to make.  It is now one of our favorite dinners.
 
 
2 Chicken breasts, cut in half
1.5 cups of chopped almonds
1.5 cups of Dijon Mustard (or Honey Mustard)
1 Yam (peeled and sliced thin)
1 Bundle Asperagus (break off the ends)
Fresh Cracked Pepper
Extra Virgin Olive Oil
 
Preheat oven to 375 degrees.  Use foil and cover a baking pan.  Use a blender or food processor to dice up the almonds, then pour in a bowl or plate.  Pour mustard into a separate bowl or plate.  Dip raw chicken in mustard bowl then dip in almond bowl and place on foiled baking pan.  Place asperagus and sliced yams on the foiled baking pan as well.  Lightly brush the veggies with olive oil then shake fresh cracked pepper over the veggies.
Place in the oven and bake for 15-20 minutes, make sure chicken is cooked all the way through.  You will see the olive oil bubbling around the veggies.  The yams should be slightly crispy.

Serve up and enjoy!

Makes 2 Servings

*To make this dish PALEO, substitute an Olive Oil & garlic mixture for the mustard, and make sure the almonds you use are raw almonds*
